INGREDIENTS:
- 3 – 4 Pound Pork Loin
- 1 Tablespoon Garlic salt
- 3 cloves minced garlic
- Zest of 1 lemon
- 2 teaspoon dried onion flakes
- 1 Tablespoon Smoked paprika
- 2 teaspoon Black pepper
- 2 sprig fresh Rosemary off the stem chopped
- ¼ C. Fresh Parsley chopped
- 2 springs Fresh Thyme
- ½ teaspoon Cayenne pepper
- 1 Tablespoon Extra Virgin Olive Oil
DIRECTIONS:
- Trim excess silverskin on the pork loin.
- Rub Pork Loin with olive oil
- Mix all remaining ingredients together and rub onto all sides of the loin.
- Place Loin on the center rack of the Halftime Smoker and closed lid.
- Cook for 1.5-2 hours until internal temperature has reached 145 degrees F.
- Allow loin to rest for 20 minutes before slicing and serving.
