INGREDIENTS:

  • 3 – 4 Pound Pork Loin
  • 1 Tablespoon Garlic salt
  • 3 cloves minced garlic
  • Zest of 1 lemon
  • 2 teaspoon dried onion flakes
  • 1 Tablespoon Smoked paprika
  • 2 teaspoon Black pepper
  • 2 sprig fresh Rosemary off the stem chopped
  • ¼ C. Fresh Parsley chopped
  • 2 springs Fresh Thyme
  • ½ teaspoon Cayenne pepper
  • 1 Tablespoon Extra Virgin Olive Oil

 

DIRECTIONS:

  • Trim excess silverskin on the pork loin.
  • Rub Pork Loin with olive oil
  • Mix all remaining ingredients together and rub onto all sides of the loin.
  • Place Loin on the center rack of the Halftime Smoker and closed lid.
  • Cook for 1.5-2 hours until internal temperature has reached 145 degrees F.
  • Allow loin to rest for 20 minutes before slicing and serving.
