INGREDIENTS:
- 8-9 lb. Rib Roast (bone in)
- Traeger Prime Rib Rub
- Garlic Salt
- Pepper
- Butcher paper
DIRECTIONS:
- Bring Prime Rib to room temperature by sitting out for 2 hours.
- Cover Prime rib roast on all sides with all 3 seasonings
- Place meat on middle rack of Halftime Smoker, insert probe & close the lid
- Add 12 lbs of charcoal into smoker’s outer ring and chimney and ignite.
- Cook for 3 hours or until it reaches an internal temperature of 140 degrees.
- Using Gloves, pull the meat off smoker and wrap in butcher paper. Let this rest for 1 hour.
- Your meat should be perfect & ready to eat after resting for 1 hour.
