Ingredients

Ham

  • 1 bone-in spiral-sliced ham (8–10 lbs, pre-cooked)

Brown Sugar Rub & Honey Glaze

  • 1 ½ cups brown sugar

  • 2 Tbsp salted butter, melted

  • 3 Tbsp honey

  • ½ tsp salt

  • 2 Tbsp Dijon mustard

  • 1 tsp cinnamon

  • ¼ tsp ground cloves

  • 3 Tbsp apple juice or ham drippings from the pan


How to Smoke a Spiral Ham on the Halftime Smoker

1. Prepare the Halftime Smoker

Load your Halftime Smoker with a 12-lb bag of Matchlight charcoal.

  • Place a drip pan in the bottom of the smoker

  • Optional: Add Mr. Bar-B-Q Apple or Cherry wood chips (recommended for mild, sweet smoke)

  • More wood chips = stronger smoke flavor


2. Make the Brown Sugar Rub

In a bowl, combine all dry ingredients from the recipe.

  • Apply half of the brown sugar rub evenly over the outside of the ham


3. Prep the Ham

  • Pat the ham dry with paper towels

  • Place it on the middle rack of the Halftime Smoker

  • Insert a probe thermometer halfway into the thickest part of the ham


4. Smoke the Ham

  • Close the lid and light the charcoal
