INGREDIENTS:
- 3-6 racks of pork ribs
Dry Rub Marinade:
- 3 tablespoons Kosher salt
- 2 Tablespoons packed brown sugar
- 1 Tablespoons ground black pepper
- 1 Tablespoons onion powder
- 2 teaspoon garlic powder
- 2 teaspoon smoked paprika
- 2 teaspoon ground cumin
Sauce:
- 3/4 cup apple juice
- ¼ cup brown sugar
- ¼ cup barbecue sauce
- ¼ cup pineapple juice
DIRECTIONS:
- Remove the membrane from ribs.
- Rub a coating of olive oil onto all ribs then apply a dry rub. Wrap and marinate in refrigerator for 24 hours.
- Mix sauce ingredients and brush on both sides of the ribs.
- Add 3 Apple wood chunks to the bottom of the Halftime Smoker.
- Hang each rib onto a rib rack by pushing rib bracket in between rib 3 and 4, then hang it inside the Halftime Smoker unit & shut the lid.
- Cook for 1.5 hours or until internal temperature reaches 185
- Add a BBQ sauce all over ribs, just enough to coat each rib.
- Wrap ribs in butcher paper and let sit for 30 minutes. The internal temperature should reach 190 degrees. Then open and enjoy!
